I also pre-cooked 3 chicken breasts. I've decided the best way to pre-cook your chicken without it drying out is to bake it in the oven. I prefer to cook all my meat right before I eat it but sometimes you gotta have some quick grab-n-go kind of stuff. I used a variety of seasonings on each frozen chicken breast. The best way to cook them in the oven is to rinse them in warm water (while the chicken is still frozen) Then season both sides and place on a cookie sheet lined with tin foil, cover loosely with another sheet of tin foil and bake for 40 minutes at 325 degrees.
I like to REALLY season my chicken since I don't get anything like cheese, dressing, or added fat. I am falling in love withe lemon pepper and use it on everything from canned green beans, asparagus, salad, pork chops, and the list goes on. I enjoy the Mrs. Dash fiesta lime seasoning as well and then making a salad with greens, cilantro, lime juice, a little homemade pico, and whatever else you want to add to make a healthy version of a cafe rio salad.
On a final update, I have been killing it at the gym this week. This fat blast program is really pushing me to the max. Our trainer has focused on teaching us how to really maximize our workouts so you work lots of muscle groups at once along with maximizing your time doing cardio. If it wasn't midnight already I would go into great detail about these workouts, but alas, it will have to wait until I'm back from vacation.
Armed with a cooler full of frozen food and all my Medifast meals all packed (we have an entire suitcase devoted to food!) I think I can get through this vacation without going off my program. Originally I planned to take a break from the program but there's no way I'm looking back now. I'm really trying to go 90 days straight without taking a break or cheating. So far, so good! Last weigh in I was down 12.4 pounds so that's encouraging! Have a great weekend! I'll be back Sunday night.
